Mexican Pizzas

2 cans black beans
1 can diced green chiles
1 medium eggplant
1 onion
1 zucchini
1 red pepper
Old El Paso taco seasoning mix
Greek olives
5-6 tortillas
Pizza sauce
Cheese

Heat black beans and chiles in a small pot. Season with taco seasonings. Set oven at 375 degrees. Line 2 baking trays with parchment paper. Place tortilas on oven racks, about 5 minutes per side. Get them crispy but not burnt. Sauté the onions, red peppers, zucchini and eggplant. Season with taco seasonings.

Remove tortillas from oven and place on baking trays. Spead a thin layer of pizza sauce over the tortillas. Next layer black bean mixture over tortillas , followed by sauteed vegetables. Dot with 5-6 Greek olives. Top off with sliced or shreddded cheese. Bake in oven for about 20 minutes. Want to heat the pizzas and melt the cheese. Enjoy!

Nice. Sounds good. I'll post my taco al pastor later or tomorrow. Wife would kick me in the nuts if I put olives on anything, but that sounds good (the pizzas, not nut kicking).

Pictures would be good too unless it gets botched, which happens to all of us. Or you don't want to post that which is cool. I'm interested to see how mine turn out. Got the vertical spit for layering the pork. We'll see. It should look cool so I'll drop some photos once I do it.

For folks that like stuffed cabbage, here is one that is actually quite tasty. As with all recipes, you can adjust as needed. I only used 1.25 lbs of ground turkey and subsituted sun-dried tomatoes for the diced tomatoes at my wife’s request. Also substituted vegetable broth for water. Served on white rice.

2 pounds ground beef

1 large onion, chopped

1 small head cabbage, chopped

2 (14.5 ounce) cans diced tomatoes

1 (8 ounce) can tomato sauce

½ cup water

2 cloves garlic, minced

2 teaspoons salt

1 teaspoon ground black pepper

Heat a Dutch oven or large skillet over medium-high heat. Cook and stir beef and onion in the hot Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease.

Add cabbage, tomatoes, tomato sauce, water, garlic, salt, and pepper and bring to a boil. Cover Dutch oven, reduce heat, and simmer until cabbage is tender, about 30 minutes

Serve hot and enjoy!
